PASTA has been our feature ingredient many times - but with the endless varieties of it available and equally endless versatility of this dish there are always new recipes to try and experiment with.
This week we have two simple recipes for you to enjoy. Firstly though, we thought it might be a good idea to give you the recipe to make fresh pasta - it is so easy to make it is surprising that most of our pasta machines abercrombie fitch are gathering dust in cupboards where we never think of them. Excellent quality pasta, fresh and dried, is available in all our supermarkets, but it can never match the flavour of good homemade pasta.
All you need to make your own pasta are: 1 egg, slightly beaten; teaspoon salt; 1 cup all-purpose flour and 2 tablespoons water. Start by combining flour and salt in a medium-sized bowl.
Make a well in the flour in the centre of the bowl, add the egg, and mix. The mixture should form stiff dough. If needed, stir in 1 to 2 tablespoons of water.
On a lightly floured surface, knead the dough for about 3 to 4 minutes. You can now make your favourite type of pasta. Using a pasta machine or by hand, roll the dough out to desired thinness. Use machine or knife to cut into strips of desired width.
Remember that fresh pasta cooks almost immediately and needs little dressing up. For our first recipe for Linguini with Spicy Prawns all you will need is bag of fresh linguini, some good quality olive oil; 4 large cloves of garlic - for true garlic lovers more cloves can be added if desired; good quality Parmesan; chilli flakes; some large prawns, pealed; some coriander to garnish.
To begin, saute the garlic in oil and add the chilli flakes. In the meantime, cook the linguine in a pot of fresh boiling water. Add the prawns to pan with the garlic, chilli and oil. Cook for around 4- 5 minutes. Once the pasta is ready - note that to have it "al dente" it should cook for more Chanel Watches Replica Watch than 5 minutes - drain well and return to pan. Add the prawns and toss together well. Serve in a large bowl with a little coriander to garnish.
Cold pasta is a very tasty option, especially in the summer - but it is still quite overlooked. We find that Asian-inspired flavours work really well with cold pasta, so the next recipe is for Noodle- style Capellini with Shiitake Mushrooms. You will need 8 ounces of capellini pasta (the very thin spaghetti type) ; Cheap Nike Blazer SB 1/2 pound shiitake mushrooms; 1 red pepper; thinly sliced 1/4 cup rice vinegar; 3 tablespoons soy sauce; 1 tablespoon vegetable oil; 1 teaspoon grated fresh ginger and 1 tablespoon chopped fresh parsley. These quantities serve 4. Cook the pasta in a large pot of boiling water.
Meanwhile, clean, stem, and slice the mushrooms. Add the mushrooms and red bell pepper during the last 2 minutes of cooking. Drain well.
Mix together vinegar, soy sauce, oil, and ginger. Transfer pasta, mushrooms, and pepper to a serving bowl and toss with the ginger dressing. Sprinkle with parsley before serving, and enjoy!
